Poached Soy Sauce Chicken 冰糖豉油鸡


This is a very simple recipe I learned from my mother-in-law.   Victor, I, Oscar and Cali are perfect team for consuming chicken.  Victor likes white meat, I like dark meat, Oscar and Cali share the rest; no fighting and no waste. 

Ingredients:
Chicken                             1 (about 1kg)
Light soy sauce                  1 cup
Dark soy sauce                  1/2 cup
Brown rock sugar              100g
Salt                                    2 tablespoons
Green onion                        2 pieces
Water                                 6 cups
Ginger                                2-3 slices


Put all ingredients in a big sauce pan, bring to boil in high heat.  Then put chicken in the pan; bring to boil again. Turn off the heat.  Let the chicken set for 1 hour or more (I always let it set for over night).  After 1 hour, bring the sauce to boil in high heat again; keep boil for 5 minutes.  Turn off the heat, leave it for another hour.  Then you can have your poached soy sauce chicken.
